Delicious Vegan Orange Cake

Ingredients
  

  • 180 ml olive oil
  • 180 g brown sugar
  • 220 ml orange juice
  • zest of 1-2 oranges
  • 500 g sifted flour
  • 2 ½ tsp. baking powder
  • 1 tsp vanilla powder
  • ½ tsp. cinnamon

For serving

  • melted chocolate or icing sugar

Instructions
 

  • In a bowl, mix the olive oil, sugar and orange juice with a fork (no mixer needed). Then, add all the remaining ingredients and continue mixing well.
  • Lightly oil and flour a cake or pyrex mold and pour in the mixture. Bake in a preheated oven at 175°C (350°F) (fan) for 45-50 minutes (the baking time depends on the oven).
    Tip: to make sure it is fully cooked, put a knife in the cake towards the end of baking. If it comes out clean, without stuck dough, it means that it’s ready.
  • Serve with melted chocolate or icing sugar!

Notes

Caution: Never open the oven before 45 minutes have passed because otherwise the cake will deflate.
