Fanouropita with raisins (Greek Sweet Pie)

Ingredients
  

  • 1 cup olive oil
  • 1 cup sugar
  • 95 ml orange juice
  • ½ cup water
  • ½ tbsp baking soda
  • lemon zest
  • 1 tbsp cinnamon
  • 4 cups of self-rising flour or other flour type where you add 1 tsp of baking powder
  • ½ cup raisins

Instructions
 

  • In a bowl, pour the olive oil, sugar, orange juice, water, baking soda and lemon zest and mix well with the mixer on medium speed for a few minutes.
  • Slowly add flour and cinnamon and mix again with the mixer on medium speed until they are well combined. If it is difficult with the mixer, continue mixing with a spoon. At the end, add the raisins and stir.
  • Lightly grease a pyrex, pour the mixture and bake in a preheated oven on medium heat (175-180 degrees Celsius) for about 45 minutes.

Notes

Tip: to make sure it is fully cooked, put a knife in the pie towards the end of baking. If it comes out clean, without stuck dough, it means that it’s ready.
