For the sauce
6tbspolive oil

1tbspfresh thyme or ½ tbsp dried
fresh dill or 1 tsp dried
ground black pepper
Instructions
Clean, peel the stem, and boil the artichokes. Put them in a pot, cover them with water, and boil them for about 30' (or until they get tender when you insert a fork).
During the artichokes boiling time or after that, prepare some potatoes (we boiled them, but you can roast them).
Prepare a yummy sauce by mixing all the sauce ingredients.
Serve the potatoes and the artichokes with the sauce and some bread.
Open the boiled artichoke with your hands, take each leaf, dip it in the sauce and eat its lower part. You’re doing this - leaf by leaf - until you reach the heart where of course you remove the flowery part with a knife and enjoy that too!
