Ingredients

  • 3 fresh large artichokes
  • half a kilo 1.1 pounds, 17.6 ounces of potatoes (boiled or baked)

For the sauce

  • 6 tbsp olive oil
  • 6 tbsp mustard
  • 6 tbsp lemon juice
  • 1 tbsp fresh thyme or ½ tbsp dried
  • fresh dill or 1 tsp dried
  • ground black pepper

Instructions

  • Clean, peel the stem, and boil the artichokes. Put them in a pot, cover them with water, and boil them for about 30' (or until they get tender when you insert a fork).
  • During the artichokes boiling time or after that, prepare some potatoes (we boiled them, but you can roast them).
  • Prepare a yummy sauce by mixing all the sauce ingredients.
  • Serve the potatoes and the artichokes with the sauce and some bread.
  • Open the boiled artichoke with your hands, take each leaf, dip it in the sauce and eat its lower part. You’re doing this - leaf by leaf - until you reach the heart where of course you remove the flowery part with a knife and enjoy that too!
