Mouth-watering Split Peas Burgers

Ingredients
  

For cooking the fava

  • 250 gr Greek fava from lathouri or yellow split peas or green split peas
  • 1 carrot
  • 1 onion
  • 2 bay leaves
  • 4 tbsp olive oil

For cooking the burgers

  • 1 red long pepper depending on the season, you can put fresh or canned
  • 2 carrots
  • 1 onion
  • 3 cloves garlic
  • 2 tbsp olive oil
  • ½ bunch parsley
  • 4-5 basil leaves
  • 5 mint leaves
  • ½ cup breadcrumbs
  • ½ tsp cumin
  • ½ tsp paprika
  • salt, pepper

For serving:

  • 1 lemon (optional)
  • rice or potatoes
  • burger buns
  • arugula or lettuce
  • ketchup, mustard, or any other sauce of your liking
  • pickled cucumber
  • onion slices

Instructions
 

  • In a saucepan put 500ml water, 1 onion, and 1 carrot cut into chunks, the 2 bay leaves, the fava beans and boil for about 20 minutes.
  • When it’s almost cooked, add 4 tbsp olive oil and remove from heat.
  • Once it is cool enough, remove the bay leaves and mix the rest in a blender (if it still has a lot of liquid, strain it first).
  • In a bowl add the fava mixture, 2 grated carrots, the chopped red pepper, the chopped onion, and the remaining ingredients.
  • Mix well and place it in the fridge for 1 hour.
  • Preheat the oven to 200 degrees C.
  • Give the burgers the shape you want and place them in parchment paper in a baking tray. Give them all the same size, so they cook the same way.
  • Bake for about 35-40 minutes (exact time depends on the oven).

For serving:

  • You can optionally pour a few drops of lemon on top of the burgers to enhance their flavors.
  • They are delicious with rice or potatoes or in sandwich burgers.
