In a saucepan put 500ml water, 1 onion, and 1 carrot cut into chunks, the 2 bay leaves, the fava beans and boil for about 20 minutes.
When it’s almost cooked, add 4 tbsp olive oil and remove from heat.
Once it is cool enough, remove the bay leaves and mix the rest in a blender (if it still has a lot of liquid, strain it first).
In a bowl add the fava mixture, 2 grated carrots, the chopped red pepper, the chopped onion, and the remaining ingredients.
Mix well and place it in the fridge for 1 hour.
Preheat the oven to 200 degrees C.
Give the burgers the shape you want and place them in parchment paper in a baking tray. Give them all the same size, so they cook the same way.
Bake for about 35-40 minutes (exact time depends on the oven).
