Peel the quinces, cut them into quarters and put them in a bowl with the lemon juice.
Put the quinces (and their seeds to thicken the syrup) together with the lemon juice and all the other ingredients in a saucepan. Boil on low heat with the lid closed for about 30 minutes.
In the last ten minutes, open the lid to help the syrup get thicker, stir and cook over low to medium heat, by taking care not to burn it.
Serve with cinnamon and any syrup of your choice (maple, fig, carob honey, agave, etc.)
Notes
Serve warm or cold.
You can also bake them in the oven.
You can replace quinces with pears or apples.
