Chervil has a unique flavor that makes the soup taste even better! It goes perfectly with the potatoes and the leek.
Potato, Leek, and Chervil Soup
Delicious and super simple recipe with a few ingredients!
Ingredients
- 4 small potatoes (approx. 250gr)
- 1 leek the white and light green part
- 1 medium onion
- 70 gr fresh chervil
- 1 garlic clove
- 20 ml olive oil (2 tbsp)
- 1 tsp curcuma
- 1 tsp smoked paprika
- pepper, salt
- juice of one lemon
Instructions
- Cut the potatoes, the leek, the onion, and the garlic into medium size chunks.
- Add the olive oil, the vegetables and the spices into a pot and sauté them.
- Add enough water to cover (approx. 1 liter) and let cook over medium heat for about 25-30 minutes.
- 2-3 minutes before turning off the heat, add about 50 gr of chervil.
- Let the soup cool so you can purée it in the blender.
- Serve in bowls and add lemon juice and a bit of fresh chervil.
