As we live the last years in Brussels, in Belgium, we are discovering every day new lovely things. One of them is how Belgians cook their artichokes differently from us.
So, while we mainly use the stem and the heart of artichokes in delicious traditional dishes, we noticed a lovely new way to taste them: to boil them and then, eat the base of the petals, apart from the stem and the heart.

You only have to boil the artichokes and the potatoes, and then, prepare a super quick sauce ready in 2 minutes.
We have used equal parts of lemon juice, olive oil, and mustard sauce (but you can adjust these quantities to your liking) along with the other sauce ingredients.
This recipe is not only delicious, easy, and quick, but also a lot of fun! Removing every leaf of the artichokes, and dipping them into the sauce is almost like a meditation or a mindfulness activity!

How to cook artichokes easy and in a lazy way
Ingredients
- 3 fresh large artichokes
- half a kilo 1.1 pounds, 17.6 ounces of potatoes (boiled or baked)
For the sauce
- 6 tbsp olive oil
- 6 tbsp mustard
- 6 tbsp lemon juice
- 1 tbsp fresh thyme or ½ tbsp dried
- fresh dill or 1 tsp dried
- ground black pepper
Instructions
- Clean, peel the stem, and boil the artichokes. Put them in a pot, cover them with water, and boil them for about 30' (or until they get tender when you insert a fork).
- During the artichokes boiling time or after that, prepare some potatoes (we boiled them, but you can roast them).
- Prepare a yummy sauce by mixing all the sauce ingredients.
- Serve the potatoes and the artichokes with the sauce and some bread.
- Open the boiled artichoke with your hands, take each leaf, dip it in the sauce and eat its lower part. You’re doing this – leaf by leaf – until you reach the heart where of course you remove the flowery part with a knife and enjoy that too!
