Even though we love to cook, sometimes we want to prepare something quick, and of course tasty, nutritious, and healthy.

With that in mind, we created those wonderful raw balls that are full of nutrients and delicious ingredients!

Vegan Raw Energy Balls

We used sunflower seeds (source of omega-6 fatty acids), flaxseeds (source of omega-3 fatty acids), walnuts, sesame seeds, a little olive oil, lemon, soy sauce and spices.

You can prepare them in just a few minutes as they do not need baking or any special preparation. All you have to do is grind the flaxseeds (always prefer freshly ground flaxseeds), and then add the sunflower seeds, the nuts and the rest of the ingredients to the blender or multi.

You form them into balls and roll them in the sesame. So simple but so delicious!

Accompany them with a nice salad and you are ready!

We chose rucola, carrot and sprinkled a few chia seeds. We also added a little bit of carob honey on top of the salad to create a beautiful contrast of bitter-sweet taste.

It is really a very easy and quick choice if you want to eat something delicious and nutritious!

Ingredients
  

  • 85 gr sunflower seeds
  • 20 gr or 6-7 walnuts
  • 20 gr or 2 tbsp flax seeds whole, not ground
  • 1,5 tsp extra virgin olive oil
  • ½ – 1 tsp lemon
  • salt
  • ½ tsp sweet paprika
  • ½ tsp smoked paprika
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • 1 tsp oregano
  • ½ – 1 tsp soy sauce
  • 15 gr or approx. 5-6 tsp water
  • sesame seeds

For the salad

  • rucola
  • carob honey optional
  • carrot
  • anything else of your liking

Instructions
 

  • In your blender or food processor, grind the whole flax seeds, the sunflower seeds, the nuts, and then, the rest of the ingredients.
  • Roll into balls of approximately 20g (7 balls in total).
  • Roll the balls in the sesame seeds until covered.
  • Enjoy them!

Notes

Use only a bit of water because you want them to hold their shape.
The nutritional analysis concerns only the raw energy balls and not the salad.
