Super Quick and Easy Raw Zucchini Salad with Sunflower Seed Cream

Super easy and quick vegan raw meal, oil, gluten and salt-free (if you exclude the salt contained in the capers).

This dish will refresh you and surprise you with its simplicity and taste. You can change the proportions and put more or less capers or add olive oil.

If you happen to have a spiralizer, then use it because they will really look like spaghetti!

Super Quick and Easy Raw Zucchini Salad with Sunflower Seed Cream

Ingredients
  

  • 2 large zucchini
  • 1 medium sweet long pepper
  • 1 clove of garlic
  • sunflower seed sauce
  • 1 tsp. paprika
  • 1 tsp. smoked paprika
  • ½ tsp. oregano or summer savory
  • 1-2 tbsp. capers

For the sunflower seed sauce

  • 100 ml of water
  • 50 gr. sunflower seeds

Instructions
 

  • Slice the zucchini into strips with the peeler and the pepper into thin vertical strips with the knife.
  • Prepare the sauce by mixing the water and sunflower seeds until completely ground. You’ll get a thick cream.
  • Grind the garlic or mix it together with the sauce.
  • Pour the sauce over the zucchini and add paprika, oregano or summer savory, and on top of that, the capers.
    Mix with the spoon and serve cold.
