Vegan Giouvetsi (Greek Style Stew with Vegan “Chicken”)

Giouvetsi or youvetsi is one of our favorite traditional Greek dishes because it reminds us of the Sunday family lunches when we were living in Greece!

It’s usually made with meat (beef, chicken, etc.) and kritharaki (orzo pasta) or hilopites (small sized pasta) and it’s baked in the oven in a ceramic (when available) baking dish.

You can replace the meat with vegan “chicken”-style chunks and enjoy this delicious meal without sacrificing any real animals for that! 😉

The taste remains the same thanks to the herbs, spices, and the other ingredients! If you want, you can replace the “chicken” with mushrooms.

Vegan Giouvetsi (Greek Style Stew with Vegan “Chicken”)

Ingredients
  

  • 250 gr orzo pasta
  • 350 ml water
  • 100 ml olive oil
  • 280 ml tomato sauce
  • 160 gr vegan “chicken-style” chunks
  • 1 onion finely chopped
  • 2-3 cloves of garlic finely chopped
  • salt, pepper
  • ½ tsp. smoked paprika
  • ½ tsp. curry
  • ½ bunch of chopped parsley
  • ½ bunch of chopped dill

Instructions
 

  • Put the orzo in a baking dish with 250 ml of water, 50 ml of olive oil, 80 ml of tomato sauce and bake at 200° C for 10 minutes.
  • Add the “chicken-style” chunks and all the other ingredients for another 20 minutes (the cooking time depends on the oven). Check it from times to times to make sure it has enough liquids so it doesn’t burn.
