Pasta with Garlic, Olive oil and Pepper

We prepared another delicious vegan dish, this time coming directly from Naples, Italy: pasta with garlic and olive oil (and pepper, optionally)! Ideal choice when you want to eat something delicious and fast to prepare.

It is a simple and traditional dish, full of flavors and aroma, and with ingredients that we all have at home. All you need is, basically, pasta, olive oil, garlic and parsley for serving.

The quantity of garlic might be huge but it’s not! We’ve added red pepper as well to have more variety and colors in our dish. If you like spicy dishes, replace the sweet red pepper with a chili one.

Pasta with Garlic and Pepper

Ingredients
  

  • 250 gr pasta spaghetti, linguine, etc.
  • 80 ml olive oil
  • 10 garlic cloves cut into thin slices
  • 1 pepper of your choice of color or chili pepper, cut into small pieces
  • 1 tsp. sweet paprika
  • ½ bunch of parsley chopped
  • salt, pepper

Instructions
 

  • Boil the pasta for half of the time indicated on the package and keep aside the water where they cooked.
  • Heat the olive oil in a pan and sauté the garlic with the pepper for a few minutes.
  • Add the half-cooked spaghetti, a little of the water where they cooked, paprika, parsley and season with salt and pepper. Continue cooking over medium heat, stir and wait a few minutes until ready.
